Ingredients

  • The Ingredients needed
  • 200 g beef suet
  • 110 g self-raising flour
  • 225 g rye breadcrumbs (you can use white bread but I like the molasses-ness of the rye)
  • 1 heaped teaspoon ground mixed spice
  • A good grating of nutmeg
  • 1 teaspoon ground cinnamon
  • 450 g soft brown sugar
  • 250 g golden sultanas
  • 250 g raisins
  • 500 g currants
  • 50 g mixed peel
  • 75 g chopped whole almonds
  • 1 bramley apple, peeled, cored and roughly chopped
  • Zest of 1 orange and 1 lemon 4 free-range eggs
  • 4 big tablespoons dark rum
  • a large glass Marsala (or another fortified wine or Cherry Brandy works well)
  • 300 ml stout
